Baklava Pancakes

Once upon a morning, I was doing some reading on Baklava and its various forms. It happened that I was just about to make pancakes and had the sudden realization that the two are not so different when it comes to butter and syrup, yet one uses a layered, thin, and flaky dough, the other has a thick and fluffy form.

So I decided a mash-up was in order...

For this recipe start with the Floral Syrup if you don't have any on hand

Attar (Floral Syrup)
Sugar | 2 Cup
Water | 1 Cup
Orange Blossom Water | 1 Tsp
Rose Water | 2 Tsp
Lemon Juice | 1 Tbsp (squeezed and pour through a sieve)

- Boil 1 cup of water first and then mix it with 2 cups of sugar in a sauce pan or small pot
- Place on high heat and continue to stir until the sugar is dissolved
- Once it comes to a boil, lower heat to a simmer, add lemon juice and leave for 15 mins
- On the last minute add the orange blossom water and rose water
- Remove from heat and allow to cool to at least room temp before using
- You can store this in a bottle or jar in the fridge for up to a month

Pancake Batter
Flour | 1 Cup
Baking Powder | 1 Tsp
Salt | 1/2 Tsp
Eggs | 1 Large
Whole Milk | 1 Cup
Butter | 2 Tbsp - Melted (luke warm)
Attar / Floral Syrup | 1 Tsp
Walnuts | 1 Cup - Pan Roasted and Chopped
Cinnamon | 1/4 Tsp
Pistachios | 1/4 Cup - Crushed

- Crack egg into a large mixing bowl and until fluffy
- Add milk and butter
- Add dry ingredients and mix till incorporated
- In a small bowl mix walnuts, cinnamon, and 1 tsp of syrup
- Grease a frying pan or griddle and set on the stove on medium-high
- Test if the pan is ready with a small drop of water, if it breaks and rolls around the pan, it is good to go
- Pour 1/4 cup of batter onto the pan at a time, and after a few seconds drop about 4-5 pieces of walnuts onto each pancake (they will sink into the batter as it cooks)
- Once bubbles surface and break, it's time to flip, cook for another minute or so and then move to a plate

To Serve
Place one one pancake on a plate, top with a few more walnuts, and a little bit of syrup
Layer another pancake on top, topped with crushed pistachios and plenty of floral syrup

These are heavier than the pancakes you may be used to, so prepare yourself :)
