Most of the time when people mention porridge, I immediately think of bland oatmeal, or those instant apple and cinnamon oatmeal. It really only takes about 10 minutes to prepare a fresh batch of oatmeal, so why not kick it up a notch? This is my favourite kind of morning porridge and it was adapted and modified from a restaurant that revolves around porridge, GRØD in Copenhagen.
1 Cup of Rolled Oats
3 Cups of Water
1/2 tsp Salt
1 Granny Smith Apple cut into small squares
2 Tbsp of Caramel or Dulce de Leche for each bowl
1 Tbsp of Chopped or Crushed Pistachios for each bowl
1 Dollop of Thick Greek Yogurt or Mascarpone for each bowl
Put oats and water in a small pot on medium-low heat and stir.
When comes to a boil, continue stirring and cooking for 4 minutes.
Remove from heat and cover for 2 minutes.
Ladle 1 Cup of cooked oats into each bowl.
Place 1 dollop of yogurt or mascarpone into each bowl.
Cover with apples and pistachios.
Serve with coffee, tea, or fresh orange juice.
